“It's the staff's fault.”
It's the most common phrase in bars.
And it is almost always the most wrong.
Because in most cases the staff is not slow.
👉It 's methodless.

Look carefully:
❌ No one knows what to do first
❌ everyone works in their own way
❌ priorities change every 2 minutes
❌ no one coordinates
❌ everyone runs, but nothing flows
This is not slow staff.
It is a staff left to its own devices.
THE TRUTH THAT HURTS
A bartender without clear directions:
– wastes time
– he's wrong
– he gets stressed
– he defends himself
– slow down even more
And do you know what he does after a while?
👉 Stop taking responsibility.
He does the bare minimum.
Because no one ever taught him HOW to work well under pressure.
THE OWNER IS THE BOTTLE NECK
When:
✔ everyone asks you everything
✔ you have to decide everything
✔ put out fires all day long
The problem is not the team.
👉You are the one who has become the system.
And a one-person system…
it is destined to break.
WHAT DO BARS THAT WORK DO?
In the bars that really rotate:
✔ each role is clear
✔ each phase has a procedure
✔ everyone knows what to do before, during and after
✔ the staff is autonomous
✔ the owner controls, does not run
Result?
The staff seems “faster”.
But it's actually more driven.
THE RIGHT QUESTION
Don't ask yourself:
“Why is my staff slow?”
Ask yourself:
👉 “If I weren't here, would the bar know how to function?”
If the answer is no,
you found the real problem.
