If you have a bar and work with a professional coffee machine, I'll tell you straight away without mincing words:
If you don't manage your water well, you're ruining your machine and your coffee every day.

It's not an opinion.
It's technical.
It's experience.
And it's one of the most common mistakes I see in bars.

I'm Giorgio Ascione and I come from the bank.
I know what it means to work under pressure, produce volumes, cash in... and at the same time put off maintenance because "the machine will run anyway."

Why cleaning your coffee machine is essential

Water is the main ingredient in coffee.
But if it is hard, full of limescale and not treated correctly, the same things always happen:

the car heats up poorly

the pressure becomes unstable

groups get clogged up

the resistors burn out

coffee changes taste

And guess who pays?
You. In service. In spare parts. In lost customers.

Water purification serves exactly this purpose:
👉 protect the machine
👉 ensure consistency in the cup
👉 extend the life of the system


Purification, salting, descaling: let's clarify

I often hear confusion in the bar, so I'll clear this up once and for all.

🔹 Purification / softening

It is the process that removes calcium and magnesium from the water before it enters the machine.
It is done through:

resin + salt water softener

filter cartridges

reverse osmosis systems

It is the first defense against limescale .


🔹 Salting (water softener regeneration)

Many people are wrong here.

Salting is of no use to the machine ,
it is used in the water softener.

The salt regenerates the internal resins that have already absorbed the limestone.
If you don't regenerate your water softener:

➡️ the water becomes hard again
➡️ Limescale enters the car
➡️ damages are guaranteed


🔹 Descaling

It is the operation that removes the limescale already present in:

water heater

pipes

groups

valves

It should be done periodically, even if you have a good water softener.


How often should the water softener be salted?

It depends on two factors:

water hardness

number of coffees per day

Indicatively:

medium water → every 7–10 days

hard water → even every 3–5 days

high volume bar → never more than 7 days

If you wait until “you remember,” you’re already late.


The correct procedure (in short)

Close the water inlet

Release the pressure

Open the water softener

Add coarse food salt

Reactivate the water slowly

Let the brine work for 30–45 minutes

Restore the system

Simple.
But it must be done well and regularly .
