Why is Saturday night always a problem?

Every week I hear the same sentences:

“Saturday is always a mess”
“We need one more person”
“It was a bad night”

No.
The truth is more inconvenient:

👉 Saturday night isn't the problem. It's the result.

It is the result of:

roles never clarified

staff left to “learn on the job”

messy desk

improvised workflows

decisions made at the last second

During the week everything seems to be holding up.
But not on Saturday night.
Because it increases the volume.
And when the volume increases, the errors amplify .

The chaos in the counter is not the fault of the staff

Here it needs to be said clearly, without hypocrisy.

If:

no one knows exactly what to do

everyone prepares things in their own way

orders come shouted

you spend the evening plugging holes

the problem is not the people .

The problem is that there is no method .

A bar without a method thrives on heroism:
someone is running,
someone makes a mistake,
someone gets tired,
someone is leaving.

And Saturday night becomes war.

The Big Lie: "We Need More Staff"

This is the most expensive excuse of all.

In most bars:

I've seen bars with few people work better than places full of staff, because:

everyone had a station

every movement had a meaning

the counter was organized

the procedures were clear

You don't win on Saturday night with numbers.
You win with organization .

Saturday night isn't something you improvise. It's something you prepare.

What you do:

Monday

on Tuesday

on Wednesday

decide how you will work on Saturday.

If you don't fix it first:

workflows

preparations

roles

times

Saturday night presents the bill .
And it does so when you are most tired and least lucid.

The solution: a bar that holds up under pressure

A healthy bar is one that:

works well when there is calm

it doesn't collapse when there's chaos

When every person knows:
✔️ where to stay
✔️ what to do
✔️ in what order to do it

Saturday night stops being stressful
and becomes a clean cash register .

The bar must not survive Saturday.
He must master it .
